How to: Blanch Peas

Currently, the only item that we carry that has NOT been blanched are our Conk Peas a/k/a Cream 40 Peas or Green Acre Peas.

We recommend that you put the quantity of peas that you want to prepare for your meal in a pot and cover them with water.  Get out a bowl and spoon to have on the counter by your pot; you will need this to scoop foam off the peas.

As they begin to boil, they will also begin to foam (it will rise to the top).  Stay close by until this stops and keep it scooped off.

In under 5 minutes, the foaming will stop.  At this point, dump the peas into a colander and rinse them with water.  You also need to wash the pot and clean the foam off of it.  Put the rinsed peas back in the pot and cover them with water, season them in whatever way you usually do.  Cook until tender (usually 20-30 minutes).

Here’s a suggestion for seasoning your peas and beans:

3 cups of peas or beans

1 1/2 Tbsp of bacon fat (solid)

1 1/2 tsp salt

Cook until tender.
