Baked Sweet Potato Chunks

Ingredients:

4 cups of SWP frozen Sweet Potato Chunks

1 stick of butter

3/4 cup brown sugar (loose, not packed)

1 tsp of cinnamon

1 tsp of vanilla flavoring

Directions:

Preheat oven to 375 degrees.

Spray casserole dish with Pam (or non stick spray).

Pour sweet potatoes in dish.  Place 5-6 pats of butter on top of the sweet potatoes. Cover with foil and bake for 30 minutes.

When the timer goes off…

Mix brown sugar and cinnamon together in a small bowl.  Melt 1/2 stick of butter in a small bowl and stir in the vanilla.  Remove foil and stir sweet potatoes.  Sprinkle brown sugar mixture over the sweet potatoes.  Pour butter mixture over brown sugar.  Cover dish with foil and put in the oven for 15-20 minutes.

When the time is up, turn the oven off and leave the dish in the warm oven until time to eat.
